On the menu: Tomato basil soup ...

If a hearty, warm bowl of soup sounds appealing, and you're looking for an easy, healthy 'from scratch' recipe that can really satisfy your taste buds, Tomato Basil Soup is hard to beat.

4 cups (8 to 10) tomatoes, peeled, cored and chopped, or 4 cups canned whole tomatoes, crushed
4 cups tomato juice or part tomato juice and part vegetable or chicken stock to equal 4 cups
12-14 washed fresh basil leaves, plus more for garnish (optional)
1 cup heavy cream
1/4 lb sweet unsalted butter
Salt, to taste
1/4 teaspoon cracked black pepper

Combine tomatoes, juice and/or stock in saucepan. Simmer 30 minutes. Puree, along with 12 to 14 basil leaves, in small batches, in blender or food processor.

Return to saucepan and add cream and butter, while stirring, over low heat. Add salt and pepper to taste.

Garnish with more basil leaves (optional) cut into chiffonades (thin strips) or left whole.

Makes 8 servings.
